6 large portobello mushroom caps
6 tsp tomato paste
200g shredded ham
60g mozzarella
12 black olives, pitted and chopped
3 cloves of garlic, finely chopped
60g of spinach
2 x lebanese cucumbers
1 tbsp lemon juice
Method:
1. Preheat the oven to 190 degrees celsius
2. Place mushroom caps on a baking tray and bake for 5-minutes in the oven
3. Remove from the oven and spread each cap with tomato paste
4. Top with ham, olives, garlic and cheese
5. Bake for 10 minutes or until cheese is melted and golden
6. Serve with a side of spinach and cucumbers topped with lemon juice
