Crispy Sweet Potato Fries

When it comes to vegetables, there’s none quite as versatile as the humble sweet potato! You can mash them, bake them, blend them, roast them, boil them and hash them… but perhaps what’s arguably the best way to eat them is when you turn them into crispy fries! 

So if you’re looking for the secret to getting crispy sweet potato fries, you’re in luck, because we’re spilling it!

Ingredients: 
  • 2 large sweet potatoes 

  • 4 tsp of cornstarch (you can also use tapioca starch)

  • 2 tbsp of olive oil 

  • ½ tsp of smoked paprika 

  • ½ tsp of garlic powder

  • Pink Himalayan Sea Salt (only use once fries have been cooked) 


Directions: 
  • Preheat the oven to 180 degrees C.

  • Evenly slice the sweet potato into thin strips. Make sure you slice as evenly as possible to avoid getting some fries that are overcooked and some that are undercooked.

  • Soak sweet potato slices in a bowl of cold water for at least 30-minutes to remove starch from the potato. This is ESSENTIAL in getting crispy fries.

  • Drain sweet potato from water and soak up excess moisture with a paper towel until potatoes are dry.

  • Transfer sweet potato back into a large bowl (make sure it’s dry) and coat in Olive Oil. 

  • Mix together cornstarch, smoked paprika and garlic powder (do not use salt here or potato will go soggy) and mix through the sweet potato mix.

  • Evenly spread the sweet potato strips onto baking paper and bake for around 15-minutes until golden (flip fries halfway to ensure they cook evenly) 

  • Remove from the oven and sprinkle with pink Himalayan sea salt.
